The Elements of a Perfect Salad

I truly enjoy a well constructed salad that I didn’t have to make, the reason being is it takes some work and is usually chalked up to “its just a salad.”

But, if you are just a little bit organized you can build a fantastic salad. It can be an entire meal thats satisfying and not boring!!

As a vegetarian I take my vegetables very seriously so when the summer hits you can imagine how happy I am to be eating super fresh and LOCAL fruits and vegetables!

Not much is better than going to your local framers market for fresh produce but, growing your own food is pretty awesome!

For those of us with no access to the ground and are limited to container gardening there is still lots you can do. I bought a package of mixed lettuce seeds from one of those temporary stands at Canadian Tire just for fun and I got quite the haul of all kinds of leafs that ranged from kale to arugula, to romaine.

My Mom said to me last weekend that she was hoping for a recipe in my last blog. I groaned and said ya I know, but I am not much of a recipe follower. When I cook I usually just throw things together and hope for the best, most of the time it does work out in my favour. So, the recipe I am about to share is more instructional rather than a recipe to follow verbatim. It is crazy what the stores are selling for some oats in the store for!! Why not make your own!! We have the time and it can occupy the kids for a bit!!

Those of us who are doing our part and self isolating in attempt to plank the curve of this Covid-19 virus may be going a bit stir crazy. I think this is the perfect time, when our lives have slowed, way down, to get our butts in the kitchen. This is a fantastic opportunity to get creative, to try new dishes, flavours, and/or new ingredients. We have been given this gift of time and space to actually cook, rather than just stuff food in our faces while on the run, going about our daily lives.

Homemade Micro Greens

Eating with the seasons is a good practice to have. Like the seasons our bodies are also cyclical. Eating a juicy tomato, as delicious as it is durning the snowy months of winter is not ideal. Our bodies are looking for the squashes and the root vegetables of late fall and winter.
