Lentils and Greens: A Satisfying Salad Perfect For Summer

Another non recipe, just an idea and a regular on my plate.

I honestly don’t understand those people who “forget to eat”. That’s crazy to me, my life kind of revolves around my next meal. In fact, most of the conversations I have with my running partner is what we ate the night before and our future meals, as we are running!

Even having “just a salad”for dinner should be tasty and leave you satisfied. I almost always have on hand in my fridge:

  1. A jar of citrus dressing, see below for directions

  2. Some leftover cooked grains

  3. Leafy Greens

With these 2 staples and a few from your pantry you can pull together a fantastic meal.

Lentils, Greens and Roasted Potato Salad with a Lemon Vinaigrette

Let’s start with the vinaigrette: I make this once a week and use it on everything, it keeps well in the fridge.

  1. Zest and juice one lemon into a jar and add olive oil (1:3) season to taste with salt and pepper. Done!

  2. Clean, cut and toss potatoes in olive oil, salt and pepper, the amount of potatoes will depend on the number of people at dinner and their love of them! Roast in the oven at 425F until crispy and cooked through. About 20 mins.

  3. Cook grains, or if using leftovers warm them through and set aside. I prefer green lentils but any grain will do.

  4. In a large bowl toss your greens, I like arugula and whatever fresh herbs I have on hand. Don’t bother to chop them, clean and gently tear them into smaller bits. Add the citrus dressing, your warm grains and potatoes toss gently and enjoy! Served with a crusty bread is a nice touch!

The grains are high in fibre, protein, the B vitamins, magnesium, iron, calcium and so many others.

The greens are high in chlorophyl, iron, magnesium, calcium, fibre, its the King of nutrients! Eat your greens!!

Potatoes are high in Vitamins C and the B’s.

Did you know that Vitamin C helps the absorption of iron? Eating this salad with the high content of citrus (vitamin C) and the leafy greens (high in iron) is a perfect pairing for good iron absorption.
